Italian Chicken & Veggie Meatballs
Ingredients
- 1 lb ground chicken
- 1 cup shredded zucchini, pressed to remove excess moisture
- 1/2 cup quick cooking oats
- 1/2 cup ricotta
- 1/4 cup sun-dried tomatoes packed in oil, finely chopped
- 1 Tbsp dried parsley OR 1/4 cup (60 mL) chopped fresh parsley
- 1 tsp basil
- 1 tsp fennel
- 1 tsp oregano
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp freshly ground black pepper
Instructions
- Preheat the oven to 400°F (200°C). Prepare a baking sheet with parchment paper and set aside.
- In a large bowl, combine ground chicken, zucchini, oats, ricotta, sun-dried tomatoes, parsley, basil, fennel, oregano, salt, garlic powder, onion powder and pepper; mix until well-combined.
- Shape into 22-26 meatballs and place on a parchment lined baking sheet.
- Bake in the preheated oven for 15-18 minutes or until the internal temperature reaches 165°F.6 servings
