Creamy Mushroom Alfredo

Ingredients
- 6 oz fettuccine pasta
- 3 Tbsp canola oil, divided
- 4 cloves garlic, minced
- 2-3 green chilies
- 2 Tbsp all-purpose flour
- 1 cup oat milk
- 7 oz fresh mushroom, sliced
- 2 Tbsp low-sodium soy sauce
- 1/2 tsp salt
- 1/4 cup Parmesan cheese
Instructions
- Bring a large pot of salted water to a boil. Add fettuccine and cook according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat 1 Tbsp (15 mL) oil over medium heat. Add garlic and chilies and saute about 2 minutes until softened.
- Add mushrooms and soy sauce to the skillet and saute for about 8 minutes or until golden brown; Set aside.
- Heat 2 Tbsp (30 mL) oil in skillet over medium-low heat. Add flour and whisk until smooth about 2-3 minutes. Slowly pour in oat milk while whisking. Allow to simmer for 1-2 minutes, stirring constantly.
- Add salt and mushrooms to sauce. Stir to combine.
- Remove sauce from the heat and add pasta; toss until well coated.
- Add Parmesan cheese, toss and serve.
