Creamy Mushroom Wild Rice Casserole
Ingredients
- 2 Tbsp canola oil
- 1 onion, diced
- 2 cups sliced cremini mushrooms
- 4 cups thinly sliced kale, stems removed
- 2 Tbsp finely chopped fresh sage leaves
- 2 Tbsp finely chopped fresh thyme leaves
- 1 Tbsp Dijon mustard
- 8 oz cream cheese
- 1 cup vegetable broth
- 2 cups grated Swiss cheese, divided
- 4 cups cooked wild rice
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 Tbsp melted butter
- 1 cup panko breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- Heat canola oil in a large oven-proof skillet over medium heat. Add the diced onion and sauté until starting to brown, about 5 minutes. Stir in the mushrooms and cook for another 8-10 minutes until most of the liquid has evaporated. Stir in the kale, herbs, mustard and cook for a few more minutes until the kale softens.
- Stir in the cream cheese and vegetable broth. Cook, stirring frequently, until the cream cheese has melted into a creamy sauce. Stir 1 cup (250 mL) of the Swiss cheese, then the cooked wild rice. Stir until everything is well combined. Season with salt and pepper.
- In a small bowl, combine the melted butter and panko crumbs. Top the casserole with remaining cheese, then the buttery breadcrumbs. Bake for 25-30 minutes, until the casserole is bubbly and golden brown.
