This is a hearty, satisfying casserole with nutty wild rice, creamy mushrooms, and savoury fresh herbs. Plenty of Swiss cheese and buttery breadcrumbs make the casserole even more delicious! This is the perfect side dish for roast chicken or turkey, making it ideal for holiday entertaining.
Heat canola oil in a large oven-proof skillet over medium heat. Add the diced onion and sauté until starting to brown, about 5 minutes. Stir in the mushrooms and cook for another 8-10 minutes until most of the liquid has evaporated. Stir in the kale, herbs, mustard and cook for a few more minutes until the kale softens.
Stir in the cream cheese and vegetable broth. Cook, stirring frequently, until the cream cheese has melted into a creamy sauce. Stir 1 cup (250 mL) of the Swiss cheese, then the cooked wild rice. Stir until everything is well combined. Season with salt and pepper.
In a small bowl, combine the melted butter and panko crumbs. Top the casserole with remaining cheese, then the buttery breadcrumbs. Bake for 25-30 minutes, until the casserole is bubbly and golden brown.
Notes
To yield 4 cups (1 L) of cooked wild rice, cook 1 cup (250 mL) of raw wild rice in 3 cups (750 mL) of water or vegetable broth. This step can be done a few days in advance.
