- 6 cups reduced-sodium beef broth
- 1 1/2 cups dried egg noodles

Instructions
- In a large Dutch oven, warm the oil over medium-high heat. Sauté the onion, carrots, celery and parsnip for 5 minutes, then stir in the garlic and sauté until the vegetables are softened and fragrant, a few more minutes. Add a generous pinch of salt at this time. Stir in the ground beef and break it up with a wooden spoon. Cook until the beef is browned, about 5 minutes.
