Ingredients

  • 12 oz eye of round fast fry cutlets/steaks
  • 3 Tbsp canola oil or vegetable oil
  • 1 tsp lime zest
  • 3 Tbsp lime juice
  • 1 clove garlic, minced
  • 2 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp ground cumin
  • 1/2 tsp salt, divided
  • 1/2 tsp pepper, divided
  • 1/4 cup butter
  • 1 Spanish or sweet onion, thinly sliced
  • 1 Tbsp chopped fresh thyme
  • 1 baguette, sliced

Instructions

  • Using a meat mallet, pound steaks to thin slightly. Using a fork, pierce steaks all over on both sides; set aside
  • In a shallow dish, stir together oil, lime zest and juice, garlic, smoked paprika, oregano, cumin, 1/4 tsp (1 mL) each of the salt and pepper. Add beef and turn to coat evenly. Cover and refrigerate for at least 1 hour or up to 4 hours.
  • Meanwhile, in a large skillet, melt butter over medium high heat and add onion, mushrooms, thyme and remaining salt and pepper. Cook, stirring occasionally for 10 minutes. Reduce heat to medium and cook for about 10 minutes or until onion is softened and mushrooms are golden; set aside.
  • Heat a cast iron skillet over medium high heat and cook steaks in batches if necessary for about 4 minutes, turning once. Place on bottom half of baguette and top with onion mixture. Top with remaining baguette and cut into 4 to serve.
