While simple in Poutine’s ingredients (there are only three after all) it’s all about their quality. In an ideal world, one would make their own fries, their own gravy and use the freshest of the fresh cheese curds (like made-the-same-day fresh), but this recipe takes advantage of the air fryer to create crispy fries on which to top your homemade gravy and plump cheese curds.

Classic Canadian Dish: Poutine
Ingredients
Gravy
- 3 Tbsp cornstarch
- 2 Tbsp water
- 6 Tbsp unsalted butter
- 1/4 cup all-purpose flour
- 20 oz beef broth
- 10 oz chicken broth
- 2 tsp Worcestershire sauce
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- fresh ground black pepper to taste
Poutine
- 4 cups frozen fries (preferably thicker cut, not shoestrings)
- salt to taste
- 1 cup cheese curds (as fresh as you can get)
Instructions
- To prepare the gravy: In a small bowl, dissolve the cornstarch in water and set aside.
- In a large saucepan, melt butter over medium heat. Add flour and cook, whisking regularly, until the mixture turns golden brown.
- Add the beef and chicken stocks to saucepan and bring up to medium-high to a boil, whisking frequently. Stir in half the cornstarch mixture and simmer for a minute or so. If you want it thicker, add more mixture.
- Add the Worcestershire, onion powder and garlic powder and season generously with pepper. Add salt to taste if needed.
- Cook your fries according to package instructions and method. Season with salt as soon as they are done.
- To assemble the Poutine: add your fries to a wide bowl or plate, add the cheese curds and top with a few ladles of gravy. Enjoy immediately.
