Butter Tart Bars

These Butter Tart Bars feature a buttery shortbread base topped with a gooey, sweet brown sugar filling. Inspired by the classic Canadian butter tart, this recipe is easier to prepare, with no need for individual tart shells. Perfectly textured with a crumbly crust and a lightly gooey top, they’re great for any occasion, or simply enjoying yourself (we won’t judge if you keep them hidden in the freezer!).

Ingredients

Crust
  • 1/2 cup butter, softened
  • 1/3 cup brown sugar, packed
  • 1 1/4 cups all-purpose flour
Top Layer
  • 2 large eggs
  • 1 cup brown sugar, packed
  • 1 tsp all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup butter, melted
  • 1 tsp vanilla
  • 1 1/2 cups raisins
  • 1/2 cup walnuts or pecans

Instructions

Crust

  • Combine butter, brown sugar and flour in a bowl until crumbly. Press mixture into an ungreased 9×9 (22 x 22cm) pan. Bake in 350°F (175°C) for about 15 minutes or until browned.

Top Layer

  • In a bowl, mix eggs and brown sugar. Add flour, baking powder, salt, butter, vanilla, raisins and walnuts to mixture. Stir to combine. Spread mixture over crust. Bake in 350°F (175°C) for about 20 minutes or until light brown. Remove from oven and allow to cool. Cut into squares.
