In a blender, combine oat milk, oatmeal, and soft tofu on high speed until smooth and creamy.
In a medium bowl, whisk together oat mixture, white vinegar, Dijon mustard, garlic powder, onion powder, pepper and salt until well combined. Stir in parsley, dill and chives.
Place the dressing in an airtight jar or container and refrigerate for at least 30 minutes before serving to allow the flavours to combine.
Notes
If you prefer a more liquid dressing, add a little more oat milk.
