These are the perfect breakfast muffins to start your day! Fibre-rich and super tasty, these muffins have a tender crumb and fun add-ins like dried cranberries and pumpkin seeds. If you thought bran muffins were boring, these will make you think twice!
Preheat the oven to 425°F (220°C). Line a muffin tin with paper liners or lightly grease the wells with cooking spray.
In a medium bowl, mix together the bran and soured milk. Let mixture sit while you prepare the remaining ingredients.
In a large bowl, combine flour, brown sugar, cinnamon, baking powder, mustard powder, salt, nutmeg, cloves and baking soda.
Add the beaten eggs, grated carrot, apple, oil, and molasses to the bran mixture. Stir well to combine and add to the dry ingredients. Stir in the cranberries and pumpkin seeds.
Divide the muffin batter evenly between the muffin cups. Top each muffin with a few pumpkin seeds. Bake at 425°F (220°C) for 6 minutes, then turn the heat down to 350°F (180°C) (no need to open the oven door) and continue baking for another 16-19 minutes, until the muffins spring back when touched and a toothpick inserted into the center comes out clean.
Transfer the muffin tin to a cooling rack and let the muffins cool for 10 minutes before removing from the tin and cooling completely on the rack.
