Thick and creamy, this fresh corn polenta is laced with buttery sautéed corn, Dijon mustard, and Parmesan cheese. Comforting and delicious, it makes a wonderful base for a myriad of stews, ragouts, roast chicken, meatballs - any of your favourite savoury cravings!
Heat the butter in a large (12-inch) skillet over medium heat. Add the corn and cook for 6-9 minutes, depending on the starchiness of the corn, until the kernels are cooked through and starting to brown around the edge of the pan.
Meanwhile, combine the chicken stock, 1/2 cup (125 mL) of water, and garlic in a large saucepan or Dutch oven. Bring to a boil over high heat. Slowly add the cornmeal while whisking constantly so there are no lumps. Switch to a wooden spoon and add the salt and pepper. Simmer over low heat for about 15-20 minutes, until the polenta is thick and creamy. Be sure to stir frequently and scrape the bottom of the pan so the polenta doesn’t burn.
When the polenta is cooked, stir in the sautéed corn, Parmesan cheese, cream, Dijon mustard, and thyme leaves. Season to taste with salt and pepper. Serve immediately.
