Ingredients
Vinaigrette:
- 3 Tbsp cider vinegar
- 2 tsp whole grain mustard
- 2 tsp honey
- 2 Tbsp canola oil
Salad:
- 1 cup cooked green lentils
- 1 cup cooked black beans or small red beans
- 1 cup cooked chickpeas
- 1 cup finley chopped baby kale
- 1/2 cup finely chopped radicchio
- 1/4 cup dried cranberries
- 3 Tbsp chopped fresh cilantro
- 3 Tbsp thinly sliced green onions
- to taste, salt and ground black pepper
Instructions
- In a small bowl, whisk together vinaigrette ingredients. Set aside.
- In a large bowl, combine salad ingredients. Toss in vinaigrette and season to taste with salt and pepper.
