Faster than takeout, these fresh hand-held salad rolls are easy to make. Get your family and friends together so everyone can make their own. Peanut dipping sauces can vary in viscosity. If the brand you use is too thick, stir in a little water to thin it out a bit.

Faster than takeout, these fresh hand-held salad rolls are easy to make.

Ingredients
- 12 (8 inch/ 20 cm) round rice paper wrappers
- 2 cups shredded lettuce
- 12 oz thinly sliced leftover roast beef, cut into strips
- 6 Tbsp prepared peanut satay sauce or hoisin sauce
Instructions
- In a pie plate or shallow dish filled with warm water, soak one rice wrapper for about 20 seconds, or until it becomes pliable. Place on a flat work surface. Soak a second rice paper sheet and place it on top of the first sheet. (This creates a stronger wrapper that is sturdier for rolling.)
- Arrange some lettuce, carrot and roast beef on the bottom half of the wrapper. Drizzle with 1 tbsp (15 mL) sauce. Carefully and firmly roll up the paper to enclose filling and create a cylinder, tucking in the sides as you roll (like rolling a burrito). Try not to overfill, as this makes it difficult to roll up. Repeat with remaining ingredients.
- Serve with extra peanut sauce for dipping. Rolls are best eaten immediately, but you can cover the wrappers with plastic wrap and refrigerate for up to 2 hours.
