These Pork & Barley Meatballs are easy to make and delicious to eat!

Ingredients
- 1 lb ground pork
- 1/2 cup *cooked pearl barley
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1 Tbsp Dijon mustard
- 1/2 tsp onion powder
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375 °F (190 °C). Lightly spray a baking dish with cooking spray.
- In a large bowl, combine ground pork, barley, Parmesan cheese, egg, mustard, onion powder, garlic, salt and pepper. Mix well with your hands. Form mixture into 1-inch (2.5 cm) meatballs and place in prepared baking dish.
- Bake for about 35 – 40 minutes or until cooked through. Serve with your favourite sauce. Yield: 16 meatballs
Notes
*To prepare barley: Before cooking, rinse barley under cold water. In a pot, bring salted water and barley to a boil, partially cover the pot with a lid, reduce heat to a simmer and let cook for about 20-25 minutes or until al dente, or according to package directions.
