Serve up these delicious homemade Barley Waffles topped with whip cream and strawberries for the perfect weekend breakfast or brunch.

Ingredients
- 2 1/4 cups whole barley flour
- 2 Tbsp granulated sugar
- 4 tsp baking powder
- 1/4 tsp salt
- 2 eggs, beaten
- 2 1/4 cups milk
- 1/4 cup canola oil
- 1 tsp vanilla
Instructions
- Start heating waffle iron as manufacturer directs.
- In a medium bowl, combine barley flour, sugar, baking powder and salt.
- In a smaller bowl, combine eggs, milk, canola oil and vanilla and stir into dry ingredients just until well combined.
- Pour batter onto the waffle iron following manufacturer’s instructions and gently close. Remove the waffles when the lid lifts open easily, about 5 to 6 minutes.

Hearty Bison Barley Soup
Just made these barley waffles and they turned out great. I have high cholesterol so I’m always looking for yummy recipes with cholesterol-lowering ingredients.
The batter is thicker and much less runny than the usual wheat batter I make, so I initially added more milk to it to make it more like the consistency of the wheat batter, but the waffles were way too thin and stuck to the waffle iron. Follow the recipe as is and they will turn out great!
