Getting tired of your usual chicken drumstick recipe? Kick things up a notch and try this recipe that uses ricotta cheese and bacon.

Ingredients

  • 8 chicken drumsticks
  • 8 slices lean smoked bacon
  • 4 Tbsp ricotta cheese
  • 1 finely diced garlic clove
  • 3 Tbsp mixed herbs
  • 2 Tbsp brown bread crumbs
  • 1 Tbsp grain mustard
  • 1 Tbsp canola oil
  • salt and pepper to taste

Instructions

  • Mix together ricotta cheese, garlic glove, herbs, and bread crumbs. Season with salt and pepper.
  • Gently loosen the skin around drumstick and evenly spoon the mixture under skin. Wrap bacon tightly around the large end. Place drumstick on baking sheet with seam end of bacon down.
  • Mix together oil and mustard and brush on chicken.
  • Bake for 30 to 40 minutes at 350°F (175°C) or until cooked through and meat thermometer registers 165°F (74°C).
