When buying cabbage look for firm heads that seem relatively heavy. Leaves should have good color and be fairly firm, without blemishes or signs of wilting along the edges.
1.Mustard Cabbage Slaw
This classic coleslaw can be made ahead and keeps well for several days!
Ingredients:
- 1 head cabbage, shredded
- 1 onion, minced
- 4 carrots, grated
Dressing:
- 1 tsp (5 mL) celery seed
- 1 1/2 cups (375 mL) vinegar
- 1 1/2 cups (375 mL) sugar
- 1/2 cup (125 mL) water
- 1/2 tsp (2 mL) turmeric
- 1 1/2 tsp (7 mL) salt
- 1/2 cup (125 mL) canola oil
- 1 1/2 tsp (7 mL) mustard seed
Cooking Directions:
- In a large bowl, combine cabbage, onion and carrots; set aside.
- In a sauce pan, mix together celery seed, vinegar, sugar, water, turmeric, salt, oil and mustard seed. Bring to a boil for a few minutes. Allow to cool and mix with vegetables.
Yield: 10 servings.
