7 Creative Cabbage Recipes

Looking for some new recipe ideas for that head of cabbage in your refrigerator?  Here are 8 creative ideas ranging from classic coleslaw to soup to cabbage rolls and more.

When buying cabbage look for firm heads that seem relatively heavy. Leaves should have good colour and be fairly firm, without blemishes or signs of wilting along the edges.

1. Mustard Cabbage Slaw

This classic coleslaw can be made ahead and keeps well for several days!

Ingredients:

  • 1 head cabbage, shredded
  • 1 onion, minced
  • 4 carrots, grated

Dressing:

  • 1 tsp (5 mL) celery seed
  • 1 1/2 cups (375 mL) vinegar
  • 1 1/2 cups (375 mL) sugar
  • 1/2 cup (125 mL) water
  • 1/2 tsp (2 mL) turmeric
  • 1 1/2 tsp (7 mL) salt
  • 1/2 cup (125 mL) canola oil
  • 1 1/2 tsp (7 mL) mustard seed

Cooking Directions:

  1. In a large bowl, combine cabbage, onion and carrots; set aside.
  2. In a sauce pan, mix together celery seed, vinegar, sugar, water, turmeric, salt, oil and mustard seed. Bring to a boil for a few minutes. Allow to cool and mix with vegetables.

Yield: 10 servings.

2. Old Fashioned Chicken Noodle Soup

A from-scratch chicken soup made from chicken legs simmered into a simple broth. No need for ready-to-serve chicken broth when it is so simple to make your own.

3. Katsu Sando Sandwich

4. Mashed Potato, Cabbage and Mustard Pancakes

With a sweet, heartening flavour, these vegetable pancakes are great comfort food and quick to mix up using leftover mashed potatoes and zesty mustard. Serve alongside grilled sausages or chops for a hearty supper.

6. Pork, Apple and Cabbage Barley Casserole

Classic partners – pork, apples and cabbage – combine with barley in this hearty oven-baked meal. Adding the elements to the oven in stages allows each to cook for just the right amount of time. The simple sauce, made with milk, is the perfect finishing touch for a dinner the whole family will love.

7. Slow Cooker Corned Beef, Barley & Cabbage

This classic Irish supper can be prepared the evening before and reheated in the oven for 30 minutes, or assemble in the slow cooker in the morning to simmer all day. Add the steamed cabbage just before serving for fresh taste and colour.
