6 Quick and Easy Cake Recipes

Let us eat cake! Can you remember a birthday party, anniversary, wedding that didn’t include a cake in the festivities? Cake means happy times and celebration.
Cakes range from the quick and easy snaking cakes to the more fanciful layered cakes; from heavy pound cakes to light angel food and chiffon cakes. In terms of ingredients… well, when you can make a cake from zucchini and rhubarb then you have to know the sky is pretty much the limit. How many different cakes can you list? What’s your favourite?

1. Cinnamon Coffee Cake

This homemade cinnamon coffee cake takes only 10 minutes to prepare and will hit the spot no matter what time of the day you eat it!

2. Prairie Streusel Topped Cake

Serve this cake warm with ice cream for a delicious dessert or with coffee and tea for a mid afternoon snack.

3. Chocolate Cake

This chocolate cake is so moist and decadent you want a second serving. The batter is made with the traditional chocolate cake ingredients such as cocoa powder and buttermilk but the addition of brewed coffee makes this chocolate cake super rich. Pair with a cold glass of milk.

4. Maple-Mustard Pear Upside Down Cake

Use a dark amber-coloured, pure maple syrup and your best mustard for a sweet hint of spicy bite that is unforgettably delicious. The yellow mustard offers a boost of colour and flavour to the cake. Serve with softly whipped cream with a hint of maple to finish the dish.

5. Simple Blueberry Cake

Nova Scotia wild blueberries and a crunchy brown sugar and cinnamon topping flavour this easy cake from egg farmers Jill and Sharon Thomas. Enjoy it plain, or top each serving with lightly sweetened whipped cream or a scoop of ice cream.

6. Lemon-Pear Bundt Cake

Vegan recipe that replaces eggs with flax eggs! This cake is moist, flavourful and great for an afternoon coffee break or get- together.
