Some days you just need to curl up with a blanket and a delicious bowl of hot soup, stew or chili. These 5 chilly day tomato recipes are just what you need.

Tomatoes rank as one of our favourite vegetables.  Not surprising as it tastes great hot or cold and is so versatile.

Nutritionally, tomatoes contain an antioxidant, lycopene, which may lower the risk of certain diseases including cancer and heart disease.  Research also shows that lycopene can be absorbed more efficiently by the body when it is heated.  So, cooking or canning tomatoes is a great way to increase the nutritional availability of tomatoes.

1. Pork Vegetable Barley Soup

Soup is not only a comfort food but a great way to use up leftover pork and vegetables that need to be used before they go to waste.

2. Canadian Pear, Sausage, Squash and Chickpea Chili

To get you started on creating your own chili, try this all-Canadian spin on Olla Gitana, a Spanish Gypsy Chili from the region of Murcia, traditionally served in terracotta pots. It features an enticing blend of affordable Canadian canned tomatoes, potatoes, green beans and mint. We have added some substitution ideas at the end. Either way, it is an inspiring and flavourful dish that makes for great, hearty leftovers.

3. Mustard Hamburger Soup

The mustard in this recipe is added late in the cooking process to preserve the mustard flavour.
