Burgers are always a family favourite. Juicy and full of flavour, the following plant-based burger recipes are a delicious way to add a bit more variety to the dinner table without compromising on taste. Using pulses such as black beans and lentils as a base for these burgers means they are sky-high in fibre and plant-based protein. Black beans and lentils are also affordable and their versatility makes them shine with a bounty of flavour profiles. The spice cupboard definitely gets a workout with these recipes, because we all love burgers with over the top flavour. While there may be a few steps to the recipes, you can make things even easier by prepping the vegetables and cooking the rice and lentils a day or two in advance or you can use leftovers. The food processor does most of the work, so hip hip hooray for that. Whether they are baked in the oven or cooked in a skillet, these burgers show that healthy eating doesn’t have to be dull or disappointing. Now, can somebody pass me the mustard?

Beet and Lentil Sliders
This is a recipe I developed for Lentils.org. It is a great make-ahead meal as the burger mixture benefits from hanging out in the fridge overnight. You can even roast the beets, as well as cook the lentils and rice a couple of days in advance. While the ingredient list may seem long, everything combines together to make a really great slider.
