Cooking Turkey Pieces

Cooking with turkey pieces offers remarkable versatility in the kitchen. Whether you’re working with turkey breast, thighs, or ground turkey, these adaptable cuts can be used in a wide range of dishes, from hearty stews and savory stir-fries to lean and healthy salads.

Food Safety

Ensuring food safety when handling turkey pieces begins with proper defrosting techniques. The safest way to thaw turkey pieces is by using one of these methods:

  • Refrigerator: Place the turkey pieces in a leak-proof container or sealed plastic bag and allow them to thaw in the refrigerator. This is the safest and most recommended method, but it requires patience as it can take several hours or even overnight depending on the size of the pieces.
  • Cold Water Bath: Submerge the turkey pieces in a tightly sealed plastic bag in cold water. Change the water every 30 minutes to maintain a safe temperature. This method is faster than refrigeration but still requires some time.
  • Microwave: If you’re in a hurry, you can use the microwave’s defrost setting, but be cautious as it can partially cook the turkey pieces in the process. Follow your microwave’s instructions and cook the turkey immediately after thawing.
  • Cooking from Frozen: In some cases, you can cook turkey pieces directly from frozen, but this will require longer cooking times. Make sure to follow specific recipe instructions if using this method.

Basic Cooking Instructions for Turkey Pieces:

Turkey pieces can be cooked in many different ways. Following are some of they key ways to cook turkey pieces. 

BBQ: Preheat the grill to medium-high heat. Season the turkey pieces with your preferred marinade or spices. Place them on the grill and cook for about 15-20 minutes per side, or until the internal temperature reaches 170°F (77°C), turning occasionally for even cooking.

Roast: Preheat the oven to 350°F (175°C). Season the turkey pieces with herbs and spices. Place them on a roasting pan or baking sheet and roast for approximately 25-35 minutes, or until the internal temperature reaches 170°F (77°C). Cooking times may vary depending on the size of the pieces.

Braise: Heat a large, oven-safe pot or Dutch oven over medium-high heat. Add oil and sear the turkey pieces until they’re browned on all sides. Remove the turkey and set it aside. Add onions, garlic, and your choice of liquid (broth, wine, etc.) to the pot. Return the turkey pieces to the pot, cover, and simmer on low heat for 1.5 to 2 hours or until the turkey is tender and fully cooked.

Stir Fry: Heat a wok or large skillet over high heat. Add oil and stir-fry the turkey pieces along with vegetables and your choice of sauce for 3-5 minutes, or until the turkey is cooked through.

Baking in the Oven: Preheat the oven to 375°F (190°C). Place the turkey pieces in a baking dish, season as desired, and cover with foil. Bake for approximately 20-30 minutes, then remove the foil and continue baking for an additional 10-15 minutes until the turkey reaches an internal temperature of 170°F (77°C).

Pan Fry: Heat a skillet over medium-high heat with a small amount of oil. Add the turkey pieces and cook for about 4-6 minutes per side, or until they’re fully cooked with a golden-brown exterior. 

Remember that the cooking times may vary depending on the thickness and size of the turkey pieces, so always use a food thermometer to ensure they reach a safe internal temperature of 170°F (77°C) to prevent food-borne illnesses and ensure a delicious meal.

Cooking Turkey Products

With the wide variety of turkey products available, it’s important to read the product packaging carefully to ensure you are cooking the product as necessary.  Some turkey products may be precooked, while others aren’t.  All products that haven’t been precooked need to be cooked to an appropriate temperature to ensure safety. 

For those turkey products that haven’t undergone precooking, it’s crucial to follow proper cooking protocols to guarantee safety. Turkey, like other poultry, must reach a specific internal temperature to kill any harmful bacteria. The recommended internal temperature for turkey products is typically 170°F (77°C).
