How to Hard Boil an Egg
- place cold eggs in a single layer in a pan.
- fill the pan with water until the eggs are covered with 1 inch of water.
- bring the water to a boil over high heat. Once boiling, cover the pan and remove from heat source.
- Let the eggs stand in the hot water, covered for 20 minutes.
- After 20 minutes immediately drain water and run cold water over eggs until they are cool to the touch.
- Peel the eggs by cracking them all over on a hard surface and start peeling at the large end of the egg.
Did you know? To determine if an egg is hard cooked or raw try spinning it. A raw egg will wobble because it has a liquid centre and a hard boiled egg will spin smoothly.
How to Poach an Egg
- add 3-4 inches of water to a small cooking pot, bring to a simmer, but not a boil.
- crack an egg into a separate bowl.
- once water is simmering, use a slotted spoon to stir the water counter clockwise-creating a small vortex.
- remove the spoon and tip the egg out of the bowl and into the pot at the centre of the vortex.
- cook egg for 4 minutes.
- Use the slotted spoon to lift out the cooked egg and let it drain off water over a kitchen towel.
How to Fry an Egg
there are 4 basic styles of fried eggs:
- Sunny side up: The egg is fried with the yolk up and is not flipped.
- Over easy: The egg is flipped and the yolk is runny.
- Over medium: The egg is flipped and the yolk is slightly runny.
- Over well: The egg is flipped and the yolk is cooked hard.
- heat a non stick, oiled pan over medium heat.
- crack an egg into a bowl to prevent small piece of egg shell getting into the fried egg. Drop the egg into the pan and season with salt and pepper to taste.
- cook the egg until the white has set and the edges begin to curl, usually around 3-4 minutes. For sunny side up eggs-remove from pan and serve.
- use a spatula and flip the egg. Allow to cook for another minute for over easy, 2 minutes for medium and 3 minutes for over well.
- remove from pan and serve.
