Using Chickpea Purée

Preparing chickpea purée 

Transfer cooked or canned and drained chickpeas to a food processor. Purée chickpeas, adding 1 tsp of water or other cooking liquid to thin. 

Store chickpea purée covered and refrigerated for 3-4 days. 

Baking with chickpea purée 

One half cup to 1 cup of chickpea purée can be incorporated into any recipe for cookies, muffins and other baked goods to boost the protein and fibre content. Blend in the chickpea purée after the other wet ingredients like butter, oil, sugar and eggs, have been combined. 

Swap out half of the butter or oil called for in any recipe with chickpea purée to reduce the fat content and add fibre to the recipe.
