Welcome. In this course, you will learn how chicken gets from the farm to your table. Check out the instructor guide in the material tab.
Start with the Chickens on the Farm section and learn how farmers care for their broiler chickens, including where they live, what they eat and the standards that farmers must follow to keep their broilers healthy. Then follow the broiler chickens from the farm to the store to find out about the different chicken cuts you can buy in the Chicken at the Grocery Store section. Finally, learn why chicken is a healthy choice and cook along as we show you how to safely handle raw meat and talk about cooking times and temperatures in the Chicken in Your Kitchen section.

Course Delivery

- Individual students selecting a specific topic to write about using information provided on the website and other resources
- Self-guided study with students completing quizzes at the end of each topic
- Team competitions at the end of each course to see which team gets the most quiz answers correct
Suggested Activities
- Invite a chicken farmer to talk about raising broiler chickens. How do they get their barns ready for chicks? What do they feed them? How do they ensure they are kept healthy? Ask them to talk about biosecurity and why that is so important in chicken farming. What sort of challenges have they experienced in their years as a chicken farmer?
- Take a field trip to a grocery store or butcher shop to look at the different cuts of chicken. Discuss what would be the best way to cook each cut of chicken. What are some things you can do to keep the chicken moist while it is being cooked? Why is it so important to cook chicken to a specific temperature before it is served?
- Watch the “Chicken Cutlets with Sage Brown Butter Mayonnaise” video, then prepare the recipe as a group. Discuss steps you take in the kitchen to ensure you handle chicken safely (clean, separate, cook, chill). How is flavour infused into the chicken? Ask participants to bring recipes from home that use different cuts of chicken and talk about how they are prepared.
