Meet Patricia Chuey. Patricia is a Canadian dietitian renowned for her work in food and nutrition communications. “Food is one spoke in the wheel of health,” she says. “Simplify, nourish and enjoy great food from our world class food system while also balancing the other spokes that contribute to great health.” She’s often called The People’s Dietitian for her common-sense approach. “Hello! What a treat to be here to share and connect with you! My food + nutrition journey began at the U of Saskatchewan in 1985 where I studied food and nutrition! These days, I do a lot of leveraging of our family meals into billable projects! 😀 I’m a hockey Mom who’s in my kitchen ‘office’ a lot. I’m also a speaker, recipe developer, food blogger and spent many years as a counselor to athletes and busy people. I get to give back as a mentor to many amazing dietitians and students. “My work as a dietitian and nutrition communicator takes me all over but my home base is on Vancouver Island. Our garden does alright here. We have a small blueberry orchard (son’s college fund) because no childhood is complete without berry picking on a scorching hot summer day! My 3 sisters and I grew up in sunny Saskatoon. Mom and Dad grew up on farms in Sask. My first job in the nutrition biz was in the Melfort-Tisdale Health Region. The Melfort Mustangs and Humboldt Broncos were the first 2 teams I gave nutrition talks to. “I’m a BIG supporter of Canadian agriculture! I’ve dug deep into where food comes from and why we can relax and be incredibly grateful for our world-class food supply. In addition to visiting many Canadian farms I’ve toured the peanut industry in Georgia (got to meet President Jimmy Carter!), almonds in California, potatoes in Idaho…and many food manufacturers. I share my learnings with consumers through the media, new recipe ideas and speaking gigs with the goal of peace of mind around eating. “Life is simply FAR too short to not enjoy the amazing produce we have access to in Canada. Here’s a recipe for a family favourite that’s often part of our festive meals. Roasted Beet, Pomegranate and Greens in the Pink – Serves 4-6 · ½ cup plus 2 tsp canola oil · 3 medium beets, peeled, quartered and sliced thinly · sea salt, to taste · 2 Tbsp white vinegar · 2 Tbsp granulated sugar · ¼ cup red onion, chopped · ½ tsp each dry mustard powder and salt · 4-6 cups chopped Romaine or green leaf lettuce · ½ cup chopped fresh parsley · 4 green onions, chopped · ½ cup pomegranate seeds 1. Roast beets: Toss beets with 2 tsp oil and a little sea salt. Place on a parchment or foil lined baking pan and roast at 350⁰F for about 35 minutes. 2. Meanwhile, prepare dressing: In blender or food processor, mix together ½ cup oil, vinegar, sugar, red onion, mustard powder and salt. 3. Assemble salad: Toss together lettuce, parsley, green onion and pomegranate seeds. Arrange beets on top and drizzle with dressing.
